This is a recipe from one of my favorite cookbooks, Primal Cravings. This is a good one to cook up a large batch of and eat throughout the week!
1 cup pizza sauce
2 TBSP of fresh basil, minced
2 TBSP EVOO
1 tsp lemon juice
Salt to tase
Butter for the ramekins
1 – Preheat oven to 400. Grease 6 ramekin dishes with butter. (I used a muffin pan.)
2 – Evenly spoon pizza sauce into ramekins. Crack 1 egg into each.
3 – Make the pesto by whisking together the basil, olive oil, lemon juice, and salt. Spoon on top of the eggs.
4 – Place the ramekins on a baking sheet and bake until the eggs are set, about 18-20 mins.
