Makes 6
1 cup pizza sauce 6 eggs 2 TBSP of fresh basil, minced 2 TBSP EVOO 1 tsp lemon juice Salt to taste Butter for the ramekins
Preheat oven to 400. Grease 6 ramekin dishes with butter. (I used a muffin pan.)
Evenly spoon pizza sauce into ramekins. Crack 1 egg into each.
Make the pesto by whisking together the basil, olive oil, lemon juice, and salt. Spoon on top of the eggs.
Place the ramekins on a baking sheet and bake until the eggs are set, about 18-20 mins.
