Meal Prep for success!

It saves time, energy, thought, and keeps you from eating random things at lunch! Meal prepping my lunches have saved me from becoming “hangry” or eating just straight peanut butter, and fills me with carbs, protein, fat, and veggies!

My favorite thing to eat is a bunch of good food in a bowl so I love prepping protein veggie bowls.
1- Cook your rice. I love white basmati rice because it’s hard to mess up!
2- Cook your protein. Ground chicken or turkey is my go to. Seasoned with salt, pepper, garlic powder, ground ginger, oregano, and chili flake.
3- Roast any and all veggies. Seriously anything! I make a huge sheet tray of roasted veggies with olive oil, salt and pepper, and possibly a squeeze of lemon (makes everything better).
4- I like to top my bowls with a sauce of some kind, but it’s also great without it. I found some awesome sauces at the grocery store: peanut satay sauce and Thai chili sauce. Yum. Just a little goes a long way.
