Homemade Granola

There are some things that are just as good when you buy them ready-made at the store and then there are some things that are just better homemade.  I think granola is better when you make it at home and this recipe is very easy to throw together.  My family likes when I make this because the house smells so good while it bakes.

¼ cup coconut oil (or olive oil)

¼ cup honey or maple syrup

½ tsp vanilla

2 cups oats

½ cup chopped pecans

2 tsp cinnamon

½ tsp salt

Mix the oats, pecans, cinnamon and salt.  Melt the oil and the honey together in the microwave and then add the vanilla. Mix the wet and dry ingredients together. Spread on a lightly greased baking sheet. 

Bake in the oven at 375 degrees for 30 minutes making sure to stir the granola halfway through.  

Once it is cooled, I add raisins or craisins, mix it all together.

With all the fresh fruit available right now, this is a great time to make yogurt parfaits with berries and granola.
